    Fleshed 4 deer hides and butchered 5 deer in past month since getting the 7 inch. It was wonderful: easier on my hands, wrists and arms, kept sharp by tuning up using butchers steel holding blade stationary at an 45° angle. Whilst fleshing, better control leads to less or no cuts through hides. I am going to seal the walnut handle with marine spar varnish.

    I have a similar knife that I used when helping with the cooking as a young girl. However, it was always used for chopping things in a large wooden bowl. After seeing your video, I pulled out my old but still very sharp “chopping knife”, as we had always called it, and immediately tried cutting up celery. Wow! So much easier and faster than with a regular knife! Wish I had know of this use when cooking for my large family. Not too late for this old Granny to learn new tricks!
