Searing lemons is one of our favorite tricks for upping the ante on any dish. The tart juice mellows out, providing the perfect balance for the briny capers and feta in this skillet side. If you have any leftovers, try adding halved cherry tomatoes and enjoying as a cold salad; some cooked chicken or shrimp would turn it into a lovely main dish.

Prosciutto Green Bean Bundles with Crispy Mushrooms Recipe

Though it may look complicated, this recipe is quite easy to prepare. To save prep time, look for bags of prewashed, pretrimmed beans in the produce section. If you can’t find the slender haricots verts, you can use regular green beans—they’ll just need to cook a few minutes longer in step 1. You can blanch the beans and prepare the dressing the day before, but wait to combine them; the acid will discolor the beans.

One taste of these quick-charred green beans, and you’ll never just steam again. Adding lemon juice and water to the browned butter mixture creates a lovely, glossy sauce that coats the beans beautifully. Super-Garlicky Green Beans and Chard with Bacon Recipe

This green bean dish pays homage to my mom’s green beans with country ham and garlic—an unwavering favorite in our Thanksgiving spread. For this brunch version, though, I wanted to add a little more color and texture and use bacon, both because it’s easy to find and, well, what’s a brunch without bacon? The diced chard stems provide confetti-like bursts of color and crunch throughout the dish, while silky chard leaves play nicely with the green beans. The garlic factor is no joke here—vampires beware. But don’t be alarmed: As garlicky as it is, it just makes you appreciate the green snap of the veggies and the salty richness of the bacon all the more.

How do you get the most flavor out of beans? ›

Bump up the flavor with tomato paste

Remember your old friend tomato paste? It's great to add into beans. Throw in a dollop or two to the aromatics once they've cooked, and sauté in the hot fat for a minute or two, just to cook out the tinny flavor. Harissa paste also works nicely for this.

How to get seasoning to stick to green beans? ›

Butter: A bit of butter adds a rich flavor and helps the seasoning stick to the green beans. Seasoned salt: Buy seasoned salt from the store, or make your own seasoned salt at home.

How to get bitterness out of green beans? ›

Blanch Them

Blanching your greens is key to getting that bitterness level down. Because glucosinolates are water-soluble compounds, a lot of them are leached out into the water, allowing for a less bitter green.
