This vegan brussel sprouts recipe is one of my favs. It makes for the perfect side dish and is loaded with flavor.
As you know, my life revolves around my kitchen. I spend so much time there, and especially around the holidays, it’s non-stop. Whether it’s Friendsgiving, Thanksgiving, or Christmas, I will be living in my kitchen during the holiday season but also outside of it. This vegan brussel sprouts recipe with garlic is perfect for a side dish, a main dish, or whatever you want.
I love brussels sprouts because they’re packed with nutrients and they taste amazing, especially when cooked right. People have this misconception of these glorious vegetables because they were fed boring steamed brussels sprouts as a kid that didn’t have any flavour. Well let me tell you, this recipe will change your perspective.
A kitchen staple
As a girl always in my kitchen, I have a kitchen staple I totally depend on and this recipe is brought to you by one of my go-to’s, and no, I’m not referring to food staples, this is a staple you’ll find in every kitchen, hand soap. Obviously, with cold and flu season upon us, it’s so important to be washing your hands in every step of the way in the kitchen. Everyone’s products have always been one of my favs. Their products are made with organic and natural plant extracts, combined with pure essential oils for the amazing smell, and are overall healthier and more sustainable choices for your household and bathroom products. Right now I’m obsessed with Everyone’s limited edition holiday hand soaps.
These hand soaps come in two amazing scents. Seriously they smell amazing! They come in Cinnamon & Coconut and Lavender & Spice. Yum! Two of their key ingredients are panthenol and tocopherol, panthenol is commonly known as vitamin B5 which is super hydrating for your skin. Especially when you are always in the kitchen and washing your hands like me. Tocopherol is the organic chemical compound of vitamin E, also great for your skin!
Okay, back to the roasted brussel sprouts with garlic recipe
I may have rambled a bit too long there, but Everyone actually creates some of my favourite products, so I couldn’t help but tell you about them.
Anyway, this vegan brussel sprouts recipe with garlic is simple, which means you won’t be panicking leading up to your dinner because you are making an incredibly stressful recipe. What makes this recipe so special and flavourful is a few key ingredients:
- Garlic
- Balsamic
- Lemon
- Herbs
These roasted sprouts are super yummy, crunchy, and crispy. I have been making them for years and have convinced everyone who hates brussels sprouts to love them. The best part? You only need to use one bowl to mix up the ingredients and cook. You sort of get to forget about them until they’re ready (aside from turning them once). And as I mentioned, brussels sprouts are loaded with health benefits. They are especially rich in vitamin K & C, rich in antioxidants, high in fibre, contain omega-3 fatty acids, and I’m only just beginning to list the benefits.
There is no better feeling than getting together with your friends, around the table, enjoying some of your favourite dishes, and seeing their happy faces as their mouths explode with flavour. Ahhhhh so satisfying as someone who loves to cook, and also loves to introduce people to foods they may have always been scared of. I promise they won’t be scared of sprouts after trying this vegan brussel sprouts recipe. They may even ask for seconds.

Ingredients
- 6 cups brussels sprouts - trimmed cut and halved
- 2 tbsp olive oil
- 2 tbsp liquid aminos
- 2 tbsp. honey or maple syrup
- 2 tbsp. sambal oelek
- 2 tbsp nutritional yeast
- 4 cloves of garlic finely chopped or pressed
- Season to taste
- Juice of one lemon
- Fresh thyme
- Drizzling of balsamic vinegar or chili oil
Instructions
Preheat oven to 400F.
Line a baking sheet with parchment and set aside.
Into a large bowl combine all your ingredients apart from the balsamic/chili oil and stir till well combined.
Line brussels onto the baking sheet, cut side down and bake for around 30 minutes or until tender on the inside and crispy on the outside. Flip halfway through to promote even baking.
Once cooked transfer Brussels to a bowl and drizzle with balsamic. Top with more fresh thyme and serve with your favourite thanksgiving dishes.

I tired these for New Years and they were a great hit! Even my husband who’s least favourite vegetables are brussel sprouts ate them!!
Thank you for the easy and yummy recipe.
Oh and I used Ajvar instead of sambal oelek because I already had an open jar of ajvar in the fridge.

Made these for dinner tonight (subbed 1 Tbsp of Tamari instead for the aminos and skipped the balsamic and thyme). This may just be my fave way to make brussels! Especially loved the outer leaves that fell off and got crispy in the oven. Anndddd my 9 year old tried to steal mine off my plate after he finished his off. 5 star recipe for sure!!
